The Turks say there are three great cuisines in the world: French, Chinese and Turkish. Even in the simplest of plces you'll find a profusion of hos d'ouvres (mezes). Try flaky pastries filled with cheese and herbs, and the spceiality borekler. Simplecountry main dishes are based on lamb, beans and aubergines, sometimes chicken with almond or red pepper sauces. Fish and shellfish are plentiful (but cost more).

Fruit is abundant, Anatolian cherries, strawberries and peaches being particularly delicious. Desserts are made from almonds, pistachios, hazelnuts, dried fruits and honey: for a real Turkish experience visit a specialist pastry shop! Turkish breakfasts are a delight too, with little cakes, cheese, tomatoes and olives, bread, honey and yoghurt, and freshly-brewed coffee.
