Fresh fish like sardines, mackerel and white bream flavour traditional soups like caldo de pescado or are grilled or pan fried. Meat courses, normally pork or chicken seasoned with fresh herbs, are accompanied by papas arrugadas – delicious salty potatoes cooked in their skins and dipped in mojo verde or mojo picon, sauces made from either coriander or paprika. Desserts are sweet or fruity - some involve syrups and nuts due to Muslim influences. Fruit grows in abundance here - pineapples, oranges, dates and papaya make delicious desserts.
