Italians are passionate about their food and Tuscans are no exception. The region’s food is based on cucina povera, a tasty rural cuisine that uses natural ingredients such as olive oil, pulses and vegetables, wild porcini mushrooms, and salt-cured meats such as salumi or prosciutto. Delicious Tuscan olive oil, greenyblack in colour, is renowned for its quality. You will find it in almost every dish – as a salad dressing, poured into soups and over lovely fresh aubergines, courgettes and mushrooms.
Every Tuscan town has its own gastronomic specialty – in Siena try the panforte di Siena, a hard spicy cake packed with nuts and candied fruit, in Lucca you will find capretto, roasted mountain goat, and Florence is famous for its thick T-bone steak, la bistecca fiorentina!
